A combination of carob (Ceratonia siliqua) and wakame (Undaria pinnatifida) is used as a functional food or dietary supplement, primarily in the form of snacks or flour blends. This combination has been studied for its potential benefits in metabolic syndrome, non-alcoholic fatty liver disease (NAFLD), and lipid metabolism. In vitro studies show that both ingredients have delipidating effects on adipocytes; carob also demonstrates anti-inflammatory and anti-hypertensive properties. In animal models, snacks containing both ingredients reduced blood pressure markers associated with metabolic syndrome. Clinical trials in obese patients indicate that consumption of snacks enriched with carob and wakame can significantly reduce total cholesterol (TC) and low-density lipoprotein cholesterol (LDL-C). The mechanisms are thought to involve inhibition of angiotensin-converting enzyme activity by carob components, reduction of triglyceride accumulation by both ingredients, antioxidant effects from polyphenols present in both plants, and possible modulation of inflammatory pathways[1][2][3][5].
