Starch and glycogen are complex carbohydrates (polysaccharides) composed of glucose monomers. Starch serves as the primary energy storage form in plants, consisting of amylose (linear chains) and amylopectin (branched chains). Glycogen is the main energy storage form in animals, characterized by a highly branched structure. Both are broken down into glucose to provide energy for cellular processes, playing crucial roles in nutrition, metabolism, and energy homeostasis. While not direct therapeutic targets, enzymes involved in their synthesis and breakdown are drug targets.
Alpha-glucosidase inhibitors reduce the breakdown of complex carbohydrates into glucose in the small intestine, thus reducing postprandial hyperglycemia.
