Peanut protein is a collective term for the diverse mixture of proteins present in the seeds of the peanut plant (Arachis hypogaea). Major constituents include storage proteins (globulins: vicilin [Ara h 1], legumin [Ara h 3]; and conglutins [Ara h 2, Ara h 6, Ara h 7]), as well as proteins involved in plant defense (defensins, oleosins). Several of these proteins are potent allergens that can trigger immunoglobulin E (IgE)-mediated allergic reactions in humans, with Ara h 2 and Ara h 6 recognized as some of the most clinically relevant. Peanut protein itself is not a single molecular entity and is not a therapeutic target in the classical sense, but its components are used as diagnostic biomarkers and are the targets of immune recognition in food allergy research and management[1][2][6].
