Peanut protein is a collective term for the diverse mixture of proteins present in the seeds of the peanut plant (Arachis hypogaea). Major constituents include storage proteins (globulins: vicilin [Ara h 1], legumin [Ara h 3]; and conglutins [Ara h 2, Ara h 6, Ara h 7]), as well as proteins involved in plant defense (defensins, oleosins).
