Overview

Starch is the primary complex carbohydrate consumed in the human diet, present in foods such as grains, potatoes, and legumes. During digestion, enzymes (notably α-amylase and α-glucosidase) break down starch into monosaccharides, primarily glucose, which is absorbed and metabolized to produce energy for cellular processes. Starch itself does not act as a drug target, but enzymes responsible for its digestion (e.g., α-amylase, α-glucosidase) can be inhibited by pharmaceuticals to modulate postprandial (after-eating) glucose levels, as in diabetes therapy[1][2][5].
