Acetylated morchella esculenta polysaccharide is a chemically modified polysaccharide derived from the edible mushroom *Morchella esculenta* (morel). This natural product derivative is under investigation for a range of biological activities, including potent antioxidative effects through modulation of the Nrf2/Keap1 pathway, antidiabetic properties via inhibition of α-amylase and α-glucosidase, and hypolipidemic effects by improving lipid metabolism and reducing adipogenesis. It also demonstrates immunomodulatory activity, linked to cytokine regulation and G protein-coupled receptor activation, as well as anti-inflammatory and antitumor properties. Furthermore, it has shown potential in inhibiting acetylcholinesterase and butyrylcholinesterase, suggesting possible applications in neurodegenerative diseases.
