**Alpha-amylase** is a digestive enzyme primarily produced by the pancreas and salivary glands that catalyzes the hydrolysis of alpha-1,4 glycosidic bonds in complex carbohydrates like starch, converting them into simpler sugars, such as maltose and glucose.
