Notably, specific fractions (e.g., AVLP-2) demonstrate protective effects against oxidative stress and inflammation, inhibiting the excessive generation of reactive oxygen species and regulating cytokine expression in cell and animal models[4]. AVP can also interact with starch, altering gelatinization and digestion properties, potentially inhibiting starch digestibility and improving thermal stability[2]. The specific mechanisms are attributed to the ability to scavenge free radicals, modulate inflammatory signaling (including NF-κB), and influence gut immunity and microbiology[4][3][5].
