Several fractions have been isolated (such as AVPG-1, AVPG-2, and AVLP-2), each displaying distinct molecular structures and compositions[1][4]. Notably, specific fractions (e.g., AVLP-2) demonstrate protective effects against oxidative stress and inflammation, inhibiting the excessive generation of reactive oxygen species and regulating cytokine expression in cell and animal models[4]. AVP can also interact with starch, altering gelatinization and digestion properties, potentially inhibiting starch digestibility and improving thermal stability[2].
