Overview

Aspergillus oryzae is a filamentous fungus widely utilized in various industrial applications, particularly in food fermentation for products like soy sauce, miso, and sake. Beyond its traditional uses, it serves as a significant source for enzymes such as acid lactase, triacylglycerol lipase, and beta-galactosidase, which are employed in dietary supplements and food processing. Furthermore, iron-enriched Aspergillus oryzae has been developed as a vehicle for iron supplementation to address iron deficiency anemia, offering potentially improved absorption and fewer side effects compared to inorganic iron salts. The fungus also produces bioactive compounds, including ergosta-4,6,8(14),22-tetraen-3-one (ETO) with anti-inflammatory properties, and macrocyclic sesterterpenoids exhibiting antibacterial activity against methicillin-resistant Staphylococcus aureus (MRSA).
