Overview

Barley (*Hordeum vulgare*) is a major cereal grain widely utilized as a food source and a dietary supplement for its metabolic and cardiovascular health benefits. Its primary therapeutic value is attributed to its high content of soluble fiber, particularly beta-glucans. These fibers form a viscous gel in the gastrointestinal tract, which delays gastric emptying and slows the absorption of dietary glucose, thereby improving postprandial glycemic control. Furthermore, barley beta-glucans bind to bile acids in the small intestine, promoting their excretion and forcing the liver to utilize circulating LDL cholesterol for new bile acid synthesis, effectively lowering blood cholesterol levels. Barley also contains bioactive alkaloids such as hordenine, which has been studied for its potential interaction with dopamine receptors and its role in metabolic regulation. The FDA has recognized the heart-health benefits of barley by allowing health claims regarding its ability to reduce the risk of coronary heart disease.
