Blueberry polyphenol concentrate is a food ingredient derived from blueberry extract, specifically concentrated polyphenolic compounds, which are then sorbed onto grinded buckwheat flour. This concentrate is rich in polyphenols (65.5±0.7 mg-eq. gallic acid/g), anthocyanins (27.3±2.7 mg/g), and flavonoids (1.2±0.1 mg/g), while excluding easily digested carbohydrates like glucose, fructose, and sucrose. It exhibits antioxidant, hypoglycemic, hypolipidemic, and anxiolytic properties. Studies in C57Bl/6 mice with impaired carbohydrate and lipid metabolism induced by a high-fat, high-carbohydrate diet showed that the concentrate significantly reduced fasting blood glucose, insulin, and leptin levels, improved insulin resistance, and decreased hepatic triglycerides and cholesterol. It also demonstrated an anxiolytic effect. The concentrate is being explored for its potential in specialized foods for the prevention of alimentary-dependent diseases such as metabolic syndrome, obesity, and diabetes mellitus.
