Brussels sprouts-Oregon State University refers to a specific dietary intervention used in pharmacokinetic research to evaluate the chemopreventive effects of cruciferous vegetables against environmental carcinogens. In a study conducted under FDA IND #117175, healthy volunteers consumed 50 g of Brussels sprouts daily for seven days. Brussels sprouts are a rich source of the glucosinolate glucobrassicin, which is hydrolyzed to indole-3-carbinol (I3C) and subsequently converted to 3,3'-diindolylmethane (DIM) in the acidic environment of the stomach. These metabolites act as ligands for the aryl hydrocarbon receptor (AhR) and modulate the expression of Phase I and Phase II detoxification enzymes, such as CYP1A1 and glutathione S-transferases. The intervention was found to significantly reduce the systemic exposure of benzo[a]pyrene, a potent carcinogen, by 56-67%, suggesting that dietary Brussels sprouts can alter the absorption and metabolism of polycyclic aromatic hydrocarbons.
