Overview

**Candida cylindracea lipase** is an extracellular enzyme belonging to the triacylglycerol acyl hydrolase family (EC 3.1.1.3), purified from the yeast Candida cylindracea. It catalyzes the hydrolysis of triglycerides to free fatty acids and glycerol. The enzyme preparation contains multiple isoenzymes, which differ in their glycosylation, hydrophobicity, substrate specificity, and stability to pH and temperature. It is a serine hydrolase and functions without cofactors. It is widely used as a biocatalyst in industries including food (cheese, edible oils, baking), flavor production, pharmaceuticals, detergents, and biodiesel manufacturing, due to its broad substrate specificity and stability. The enzyme is recognized as GRAS (Generally Recognized as Safe) for use in food processing[1][3][4][6].
