Carob pod extract is an extract derived from the dried pods of the *Ceratonia siliqua* tree, commonly known as carob. It is rich in polyphenols, especially tannins, as well as dietary fiber, galactomannan, low amounts of fat, and micronutrients such as calcium, magnesium, and vitamins. The extract exhibits various biological activities, including antioxidant, anti-diarrheal, anti-inflammatory, hypocholesterolemic, anti-obesity, anti-diabetic, antimicrobial, and potential anticancer properties. Mechanistically, carob pod extract’s effects are predominantly attributed to its polyphenol and fiber content, which can reduce cholesterol absorption, modulate glycemic response via inhibition of carbohydrate-digesting enzymes like α-amylase and α-glucosidase, provide antioxidant capacity via direct radical scavenging, exert anti-diarrheal effects through high tannin content, and exhibit anti-inflammatory activity through inhibition of pro-inflammatory mediators[1][3][4][5][7][9][10]. Applications include use as a functional food ingredient, dietary supplement, and traditional remedy for gastrointestinal, metabolic, and inflammatory issues.
