Casein glycomacropeptide (CGMP) is a 64-amino acid bioactive peptide derived from the C-terminal of bovine $\kappa$-casein during cheese production. It is characterized by a lack of aromatic amino acids (phenylalanine, tyrosine, tryptophan), making it a valuable protein source for patients with phenylketonuria (PKU). Beyond its nutritional profile, CGMP exhibits immunomodulatory and anti-inflammatory properties, including the suppression of pro-inflammatory cytokines (TNF-$\alpha$, IL-6, IL-17) and the inhibition of the NF-$\kappa$B signaling pathway. Clinical research has explored its potential as a nutritional therapy for active distal ulcerative colitis, where it has shown efficacy comparable to mesalamine dose escalation in pilot studies. It also acts as a prebiotic, modulating the gut microbiota and increasing short-chain fatty acid production.
