Overview

Chitosan oligosaccharide (COS) is a low molecular weight oligomer derived from the partial hydrolysis of chitosan, itself obtained by deacetylation of chitin. It consists of β-(1→4)-linked D-glucosamine and N-acetyl-D-glucosamine units, with an average molecular weight typically less than 5,000 Da[2][3]. Unlike high-molecular-weight chitosan, COS is highly water-soluble at neutral pH and exhibits improved bioavailability[3]. COS has been studied for a range of biological activities including anti-tumor, anti-inflammatory, antioxidant, antibacterial effects, immune modulation, and prebiotic activity[2][3][5][6]. Mechanistically, it can modulate inflammatory pathways (notably inhibiting NF-kappaB signaling), activate the calcium-sensing receptor (CaSR), and influence metabolic parameters such as body weight and blood glucose through effects on lipid metabolism and gut microbiota composition[5][6]. It is used in dietary supplements for cholesterol reduction and glucose control; it also finds applications in drug delivery systems due to its biocompatibility and biodegradability[3][7].
