Raw corn starch is a complex carbohydrate utilized as a therapeutic agent for the management of glycogen storage diseases (GSD), such as GSD type I, III, VI, and IX, to prevent life-threatening hypoglycemia. Due to its semi-crystalline structure, raw (uncooked) corn starch is resistant to rapid enzymatic digestion in the small intestine, resulting in a slow, sustained release of glucose into the systemic circulation. Beyond its role in GSD, raw corn starch is classified as a slowly digestible carbohydrate (SDC) that can reach the distal small intestine (ileum), where it triggers the "ileal brake"—a feedback mechanism that delays gastric emptying and promotes satiety through the stimulation of gut hormones like glucagon-like peptide-1 (GLP-1) and peptide YY (PYY).
