Overview

Disodium guanosine monophosphate is the disodium salt of guanosine 5'-monophosphate (GMP), a nucleotide consisting of the phosphate group, the ribose sugar, and the nucleobase guanine. As a small molecule, it occurs widely in nature as an RNA monomer and is commercially produced for use as a flavor enhancer in foods and as a pharmaceutical or dietary supplement. Its primary mechanism as a food additive is to act as a flavor potentiator, intensifying umami taste in combination with monosodium glutamate and other nucleotides. When used pharmaceutically (often in combination with other agents, such as lactoferrin), it may function by influencing hepcidin levels and iron metabolism[1][3]. No intrinsic pharmacological effect on molecular targets in humans as a single agent is routinely described, and it is generally considered safe as a food additive[13][14].
