EPS-WB4503 is a crude exopolysaccharide (EPS) produced by the probiotic bacterium *Lactiplantibacillus plantarum* WB4503, which was isolated from kimchi. It functions by inducing the intrinsic apoptosis pathway, evidenced by the activation of caspase-3 and caspase-9, and an increase in the Bax/Bcl-2 ratio, leading to DNA fragmentation and reduced cell viability.
