Overview

Ethoxyquin is a synthetic quinoline-based antioxidant primarily used as a preservative in animal feed and certain spices to prevent lipid peroxidation and color loss. It was originally developed for post-harvest treatment of pears to control scald under the commercial name "Stop-Scald." Ethoxyquin acts by inhibiting oxidation processes that lead to rancidity in fats and degradation of carotenoid pigments. While it is approved for use in animal feeds (notably for dogs, poultry, and farmed fish) in some countries like the United States, its use has been restricted or suspended in others due to safety concerns. The compound is not permitted as a food additive for human consumption except in specific spices such as chili powder and paprika. Ethoxyquin's mechanism of action is as an antioxidant; it scavenges free radicals to protect lipids from oxidative damage[1][5][7].
