Overview

Fructose is a simple ketonic monosaccharide (ketohexose) with the molecular formula C6H12O6. It is naturally found in fruits, honey, flowers, berries, and most root vegetables. Fructose is the sweetest of all naturally occurring carbohydrates and is widely used as a sweetener in food and beverage industries due to its high solubility and palatability[1][2][4]. Commercially produced from corn or sugar beets/cane (often as part of high-fructose syrups), it enhances flavor and moisture retention in processed foods[5]. In metabolism, fructose can be fermented by yeast or bacteria to produce ethanol and carbon dioxide. It participates rapidly in the Maillard reaction with amino acids due to its higher proportion of open-chain form compared to glucose[1][4]. Excessive intake has been associated with metabolic disorders such as obesity and insulin resistance[2].
