Glucose oxidase is an enzyme belonging to the class of oxidoreductases, specifically catalyzing the oxidation of β-D-glucose to D-glucono-δ-lactone and hydrogen peroxide using molecular oxygen as an electron acceptor. It is a flavoprotein containing flavin adenine dinucleotide (FAD) as a cofactor. Glucose oxidase is widely used in medical diagnostics, particularly in blood glucose monitoring devices and biosensors for diabetes management, where it enables specific and rapid quantification of glucose by generating hydrogen peroxide that can be measured colorimetrically or electrochemically. In the food industry, it serves as a natural preservative by removing oxygen from packaging to prevent spoilage and extend shelf life; it also improves dough strength in baking by promoting oxidative cross-linking of proteins. Additionally, glucose oxidase has been investigated for pharmaceutical applications such as wound care (as part of hydrogel dressings) and has undergone clinical trials for upper respiratory tract infections like the common cold[1][2][3][4][5][6].
