Grape pomace is the solid byproduct remaining after grapes are pressed for juice or wine. It consists of skins, pulp, seeds, and stems. Rich in polyphenols (including anthocyanins, flavonols, phenolic acids, stilbenes like resveratrol), dietary fiber, and other bioactive compounds, grape pomace has been studied for its antioxidant, anti-inflammatory, cardioprotective, antidiabetic, antimicrobial and prebiotic properties. It is used as a functional food ingredient (e.g., in yogurts or baked goods), dietary supplement (mainly for its polyphenol content), cosmetic ingredient (for skin protection/antiaging), animal feed additive and soil fertilizer. Its mechanisms of action are primarily attributed to the antioxidant activity of polyphenols and their effects on metabolic enzymes and gut microbiota[1][3][4][6].
