Gynura bicolor (also spelled Gynura bicolour) is a perennial herb in the Asteraceae family, commonly consumed as a vegetable in East Asia and known as Okinawan spinach. Research into its ethanol extracts (GBEE) has demonstrated significant antioxidant and vasoprotective properties in preclinical models. The extract acts by scavenging free radicals, increasing glutathione levels, and downregulating the expression of key vascular adhesion molecules, including E-selectin, intercellular adhesion molecule-1 (ICAM-1), and vascular cell adhesion protein-1 (VCAM-1). These mechanisms suggest that Gynura bicolor may have therapeutic potential in preventing the development of atherosclerosis and managing vascular inflammation.
