Overview

Kefir is a probiotic fermented milk beverage created by inoculating milk with kefir grains, a symbiotic culture of lactic acid bacteria and yeasts. It is being clinically investigated for various health benefits, primarily acting as a microbiome modulator. Research suggests that regular consumption of kefir may improve several components of metabolic syndrome, including reducing blood pressure, triglycerides, and fasting glucose, while increasing HDL cholesterol. It has also demonstrated potential anti-inflammatory effects by decreasing levels of pro-inflammatory cytokines such as TNF-α and IFN-γ. The therapeutic mechanisms are attributed to both the live microorganisms that modulate the gut microbiota and the bioactive compounds produced during fermentation, such as exopolysaccharides (e.g., kefiran) and peptides with activities like angiotensin-converting enzyme (ACE) inhibition.
