Kimchi is a traditional Korean fermented food investigated for its anti-obesity effects. Research, including preclinical animal studies and a 13-year population-based study (KoGES), suggests that regular consumption can reduce body fat, decrease body mass index (BMI), and lower obesity incidence. A clinical trial in overweight adults demonstrated that consuming kimchi capsules led to a decrease in body fat and modulated the gut microbiota by increasing beneficial *Akkermansia muciniphila* and reducing obesity-associated *Proteobacteria*. The World Institute of Kimchi and Pusan National University Hospital have been involved in its development and research.
