Overview
Kimchi powder is a processed, dehydrated form of kimchi, a traditional Korean fermented vegetable dish. It is utilized as a dietary supplement and functional food, particularly investigated for its anti-obesity and metabolic benefits. The powder contains a complex mixture of lactic acid bacteria (such as *Leuconostoc mesenteroides*), fiber, and various bioactive compounds. Its primary mechanism of action involves the modulation of the gut microbiota, specifically increasing the abundance of beneficial bacteria like *Akkermansia muciniphila* and decreasing *Proteobacteria*. These microbial shifts are associated with significant reductions in body fat mass and improvements in lipid profiles, as demonstrated in randomized, double-blind, placebo-controlled clinical trials. It has also been shown to influence steroid hormone and bile acid metabolism in animal models.
