Overview

Kudzu resistant starch (KRS) is a dietary supplement and prebiotic derived from the kudzu plant (*Pueraria lobata*). It is characterized by its resistance to digestion in the small intestine, allowing it to reach the colon where it undergoes fermentation by gut microbiota. KRS has demonstrated therapeutic potential in metabolic disorders, including non-alcoholic fatty liver disease (NAFLD) and type 2 diabetes mellitus (T2DM). Its mechanism involves the modulation of gut microbiota diversity, enhancement of intestinal barrier function (via increased expression of zonula occludens-1 and mucin 2), and suppression of systemic inflammation through the down-regulation of the LPS/TLR4 signaling pathway. Additionally, KRS regulates lipid metabolism and improves insulin sensitivity by modulating signaling pathways such as IRS-1/PI3K/AKT/Glut4 and PPAR-γ.
