Lactobacillus amylovorus is a species of lactic acid bacteria within the genus Lactobacillus, known for its ability to efficiently utilize starch and hydrolyze complex carbohydrates. It is Gram-positive, acid-resistant, and bile salt-resistant, with optimal growth at pH 5.5–6.0 but able to survive in more acidic environments[3]. This bacterium produces various enzymes such as α-galactosidase, β-galactosidase, α-glucosidase, β-glucosidase, and ferulic acid esterase[1][3]. As a probiotic candidate and food/feed additive, it has been studied for its antibacterial properties against pathogens like Salmonella typhimurium and Staphylococcus aureus[1][3]. In animal models (notably pigs), L. amylovorus can dominate the small intestine microbiota when provided with peptide-rich diets due to its preference for peptide-bound amino acids as nutrient sources[6]. Some strains have also been investigated as paraprobiotics for obesity prevention in humans[8].
