Lactobacillus plantarum Lp90 is a specific strain of the lactic acid bacterium Lactobacillus plantarum, originally isolated from the Apulian (South of Italy) wine "Nero di Troia"[3]. The Lp90 strain is characterized by a distinctive "ropy" phenotype due to its overproduction of exopolysaccharides (EPS), which may contribute to its functional properties as a probiotic[3]. It is explored for its potential probiotic benefits, including direct antimicrobial activity against a broad range of foodborne and pathogenic microbes, possibly through production of organic acids, hydrogen peroxide, EPS, and bacteriocins[1]. The genome of Lp90 has been sequenced, revealing >3,000 protein coding genes and features associated with environmental adaptation and probiotic activity[3].
