Lotus seed starch + epigallocatechin gallate refers to a nutraceutical complex formed between the polysaccharide starch extracted from lotus seeds (*Nelumbo nucifera*) and epigallocatechin gallate (EGCG), the primary bioactive polyphenol found in green tea. In food science and metabolic research, these two components are studied for their synergistic interactions, where EGCG binds to the amylose and amylopectin chains of the starch through non-covalent interactions such as hydrogen bonding and hydrophobic forces. This binding alters the physicochemical properties of the starch, significantly increasing the proportion of resistant starch (RS) and slowly digestible starch (SDS), thereby lowering the glycemic index. Furthermore, the starch matrix acts as a protective carrier for EGCG, enhancing its stability against gastrointestinal degradation and potentially improving its delivery to the colon. The combination is primarily investigated for its potential in managing postprandial hyperglycemia, obesity, and metabolic syndrome.
