Overview

Oat beta-glucan is a soluble dietary fiber and non-starch polysaccharide found primarily in the cell walls of oat (Avena sativa) endosperm and aleurone layers. It consists mainly of linear chains of D-glucose monomers linked by mixed β-(1→3) and β-(1→4) glycosidic bonds. The typical structure features segments of consecutive β-(1→4)-linked glucose units interrupted by single β-(1→3) linkages[1][5]. This unique structure imparts high water solubility and viscosity. Mechanistically, oat beta-glucan acts as a viscous soluble fiber in the gastrointestinal tract. Its primary health effects include lowering blood cholesterol levels—by binding bile acids and reducing their reabsorption—and attenuating postprandial blood glucose spikes through delayed gastric emptying and reduced glucose absorption[6][8][9]. It also serves as a prebiotic to support gut microbiota balance[6][8], enhances satiety, may help regulate lipid metabolism, supports immune modulation (though less so than yeast-derived forms), and has antioxidant properties[6][8]. Oat beta-glucan is widely used as an ingredient in functional foods (e.g., cereals, bars), nutritional supplements (powders/capsules), beverages, dairy alternatives, bakery products for its health benefits as well as its thickening/stabilizing properties[5][10]. Regulatory authorities such as the US FDA and EFSA have approved health claims for cholesterol reduction when consumed at effective doses; it is generally recognized as safe (GRAS)[8].
