**Oat protein fibril-iron complex** is an investigational, plant-based iron-delivery and food-fortification material consisting of edible oat protein nanofibrils coated with ultrasmall iron nanoparticles. The hybrid can be engineered to contain predominantly ferrous or ferric iron; the ferrous preparation generated using sodium ascorbate demonstrated substantially greater fractional iron absorption than ferrous sulfate in a prospective stable-isotope crossover study in 52 young women with iron deficiency, while the ferric preparation showed favorable sensory characteristics in reactive food matrices. It is being developed by ETH Zurich as a dietary iron supplement and food fortificant for iron deficiency and iron deficiency anemia, rather than as a conventional receptor-targeted pharmaceutical.
