Oligosaccharides from cold-pressed sesame meal (OCPM) are a group of non-digestible carbohydrates extracted from the byproduct of sesame oil production. These oligosaccharides, characterized by molecular weights ranging from approximately 424 Da to 1167 Da, function as prebiotics by resisting digestion in the upper gastrointestinal tract. Upon reaching the colon, they serve as a selective fermentation substrate for beneficial gut microbiota. Research indicates that OCPM specifically promotes the proliferation of probiotic bacteria such as *Lactobacillus plantarum* and *Lactococcus lactis* while simultaneously inhibiting the growth of potential pathogens. By modulating the composition and activity of the gut microbiome, OCPM is being investigated as a functional food ingredient or dietary supplement to support digestive health and systemic metabolic functions.
