Parsley essential oil is a botanical extract derived from the plant *Petroselinum crispum*. It is being investigated as a nutraceutical and prebiotic for its potential to mitigate risks associated with ischemic heart disease (IHD) and type-2 diabetes mellitus (T2DM). The oil functions by modulating the gut microbiota, specifically increasing the abundance of beneficial bacteria such as the *Lactobacillus* genus. This microbial shift leads to a decrease in the plasma levels of the pro-atherogenic metabolite trimethylamine N-oxide (TMAO) and an increase in fecal short-chain fatty acids (SCFAs). Furthermore, parsley essential oil demonstrates anti-inflammatory properties by reducing pro-inflammatory cytokines like TNFα and INFɣ, and antioxidant effects by lowering markers of oxidative stress such as protein carbonyls and pentosidine. It also appears to increase levels of thrombomodulin, a marker of endothelial health.
