Overview

*Penicillium camemberti* is a domesticated filamentous fungus primarily known for its essential role in the ripening of soft cheeses such as Camembert and Brie. Beyond its culinary applications, it is investigated for its therapeutic and biotechnological potential. Clinical research has demonstrated that a milk-based culture of *P. camemberti* (MCW) can help maintain cognitive functions, particularly short-term and working memory, and improve sleep quality in elderly populations. These effects are hypothesized to be mediated by the fermentation-derived metabolite oleamide, which may modulate brain-derived neurotrophic factor (BDNF) levels. Additionally, the fungus produces various bioactive secondary metabolites, including penicamins (polyoxygenated diterpenes) with immunosuppressive properties and fumigermin, a compound with potential cosmetic applications for skin whitening and wrinkle reduction. It also serves as a source of industrial enzymes, such as lipases used in chemical synthesis and food quality control.
