Resistant potato starch (RPS) is a type of resistant starch (specifically RS2) that resists digestion in the small intestine and ferments in the large intestine. As a prebiotic, it feeds beneficial gut bacteria, promoting the production of short-chain fatty acids, particularly butyrate. Butyrate serves as the preferred fuel for colonic cells and has been associated with various health benefits including improved gut health, reduced inflammation, and enhanced metabolic function. RPS contains approximately 80% resistant starch by weight.
