Overview

Saccharomyces cerevisiae is a species of fungus (yeast) widely used in food production (baking and brewing), biotechnology, and medicine. In clinical settings, it is primarily used as a probiotic to restore or maintain healthy gut flora and prevent or treat various forms of diarrhea—including antibiotic-associated diarrhea and traveler's diarrhea—by competing with pathogenic microorganisms in the gastrointestinal tract. The strain Saccharomyces cerevisiae var. boulardii is specifically manufactured for medicinal use as a probiotic agent[5][6][8]. Its mechanism of action involves restoration of intestinal microbiota balance and inhibition of pathogen adhesion to the gut lining[8]. It can also be used as an allergenic extract for diagnostic testing in allergy clinics[1][2][4]. Genetically engineered strains are employed in the production of recombinant pharmaceuticals such as insulin and vaccines[6].
