Samh seeds, derived from the plant Mesembryanthemum forsskalei Hochst (also known as M. cryptanthum or Opophytum forsskalii), are a natural product with significant nutritional and potential medicinal benefits. They are rich in protein, essential amino acids, unsaturated fatty acids, dietary fibers, and antioxidant compounds like phenolic compounds (gallic acid, catechol, catechin). Studies have shown that processed Samh seeds (germinated or fermented) can reduce hyperlipidemia, oxidative stress, and inflammation, and improve liver integrity in high-fat diet-fed rats. They have also demonstrated hypoglycemic and antihyperlipidemic effects in diabetic rats. Samh seeds can be incorporated into food products like protein-energy balls and used as a replacement for wheat flour, enhancing nutritional value and providing antioxidant activity. Furthermore, silver nanoparticles fabricated using Samh seed extract have shown antimicrobial and cytotoxic capabilities against cancer cell lines.
