Sardine protein refers to a protein product derived from the muscle tissue of sardines, small oily fish from the herring family. Commercially, sardine protein is often obtained via enzymatic hydrolysis of sardine muscle (using alkaline protease under controlled conditions), resulting in short-chain peptides—primarily dipeptides, tripeptides, and oligopeptides of up to five amino acids. Notably, some specific peptides such as valyl-tyrosine (VY) from sardine hydrolysate have been shown to inhibit angiotensin I converting enzyme and produce blood pressure–lowering effects in human studies[1][2]. Sardine protein also provides complete, highly bioavailable protein with all essential amino acids, and exhibits additional benefits such as antioxidant, anti-atherogenic, and glycemic regulation properties[2][3][4][6]. Mechanistically, its bioactivity includes the inhibition of angiotensin I converting enzyme and modulation of vascular and metabolic health through amino acids such as arginine and taurine[1][3][4]. Sardine protein is primarily investigated as a dietary supplement or food ingredient to support cardiovascular health, metabolic improvement, and antioxidant defense[1][2][3][4][6].
