Saury oil is a marine-derived lipid extract obtained from the Pacific saury (*Cololabis saira*), notable for its high content of omega-3 polyunsaturated fatty acids (n-3 PUFAs) like eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), as well as omega-11 long-chain monounsaturated fatty acids (LCMUFAs) such as gadoleic acid (C20:1) and cetoleic acid (C22:1). It has demonstrated anti-obesity, hepatoprotective, and cardioprotective effects in both preclinical models and human clinical trials. The oil's mechanism of action involves the downregulation of lipogenic genes (SREBP-1, SCD-1, FAS, and ACC) and the upregulation of genes involved in fatty acid oxidation and energy expenditure (CPT-1, PGC-1α). Additionally, saury oil improves endothelial function and insulin sensitivity, potentially through the modulation of gut microbiota, which leads to increased production of short-chain fatty acids and stimulation of glucagon-like peptide-1 (GLP-1) secretion.
