Savory essential oil is a volatile oil obtained by steam distillation from the leaves and flowering tops of plants in the Satureja genus, especially Satureja montana (mountain or winter savory) and Satureja hortensis (summer savory). It is rich in phenolic monoterpenes, mainly thymol and carvacrol, along with p-cymene and γ-terpinene as major constituents[2][4][5][6]. This essential oil exhibits broad-spectrum antimicrobial, antifungal, antiviral, antioxidant, and anti-inflammatory activities, believed to stem from its high phenol content[1][2][3][7]. In aromatherapy, it is used for its stimulating, immunomodulatory, and digestive-supportive properties (e.g., relieving indigestion, bloating, and gastrointestinal discomfort), and it is sometimes applied topically in diluted form for skin infections, burns, and muscle or joint discomfort[1][7][9]. Numerous traditional applications include support for immune function, digestive health, muscle tension, respiratory health, and as a general wellness tonic. It is used in food flavoring, perfumery, herbal teas, and cosmetic or pharmaceutical formulations[5][7].
