Overview

Sodium bisulfite is a small molecule compound with the approximate chemical formula NaHSO3. It appears as white or yellowish-white crystals with a sulfurous odor. Sodium bisulfite is used in parenteral nutrition products for patients with severe liver disorders and has been applied externally for parasitic skin diseases and as a gastrointestinal antiseptic. In addition to its pharmaceutical uses, it serves as a reducing agent in various industrial applications, including food preservation (E number E222), cosmetics, and bleaching processes. Mechanistically, it acts primarily as an antioxidant/reducing agent; it can also deaminate cytosine residues in single-stranded DNA via sulfonation[1][4][5].
