Overview

Soy lecithin is a food additive and dietary supplement derived from soybeans that functions primarily as an emulsifier. It contains a mixture of phospholipids, including phosphatidylcholine, phosphatidylinositol, and phosphatidylethanolamine, along with other components. Soy lecithin is a complex mixture of phospholipids, glycolipids, and triglycerides extracted from soybeans. It contains substantial amounts of phosphatidylcholines, phosphatidylethanolamines, and phosphatidylinositols[3]. The extraction process typically involves using a chemical solvent like hexane to extract oil from raw soybeans, followed by a degumming process that separates and dries the lecithin[4]. In the body, lecithin serves as the main dietary source of choline, a nutrient similar to B vitamins. This choline is converted into acetylcholine, a neurotransmitter essential for nerve impulse transmission[1][9]. The major components of commercial soybean-derived lecithin include: - 33-35% soybean oil - 20-21% phosphatidylinositols - 19-21% phosphatidylcholine - 8-20% phosphatidylethanolamine - 5-11% other phosphatides including phosphatidylserine - 5% free carbohydrates - 2-5% sterols - 1% moisture[5]
