Spray-dried high-chromium yeast is a nutritional supplement and potential therapeutic agent for the management of type 2 diabetes and metabolic disorders. It is produced by incorporating chromium into yeast (*Saccharomyces cerevisiae*) during the fermentation process, followed by a spray-drying technique to preserve bioactivity. Chromium is an essential trace element that enhances insulin sensitivity and plays a critical role in carbohydrate, lipid, and protein metabolism. Research in diabetic mouse models (KK-AY) indicates that the spray-dried formulation significantly delays the onset of hyperglycemia, improves fasting blood glucose levels, and reduces triglycerides and total cholesterol. Histopathological evidence suggests it protects pancreatic β-cells and alleviates hepatic steatosis.
