Strawberry anthocyanin extract is a concentrated preparation of the water-soluble pigments known as anthocyanins derived from strawberries. Anthocyanins are a subclass of flavonoids responsible for the red coloration in strawberries and are recognized for their antioxidant, anti-inflammatory, and potential vasoprotective properties. The primary active components include pelargonidin-3-glucoside and cyanidin-3-glucoside. These compounds act mainly as antioxidants by scavenging free radicals and may modulate digestive enzymes and gut microbiota activity. Strawberry anthocyanin extracts have been studied for their effects on oxidative stress, mitochondrial function, blood vessel health, enzyme inhibition in the gut, and modulation of microbiota composition[4][7]. They are not absorbed efficiently in the upper gastrointestinal tract but reach the colon where they can be metabolized by intestinal bacteria into bioactive metabolites[4]. The instability of these extracts under heat, light, or oxidative conditions can be improved by complexation with carriers such as β-cyclodextrin or starch[5].
