Sucromalt is a nutritive sweetener and slowly digestible carbohydrate produced by the enzymatic conversion of a blend of sucrose and corn syrup using an alternansucrase enzyme from *Leuconostoc mesenteroides*. It is characterized by a unique mixture of carbohydrates with alpha-1,3 and alpha-1,6 linkages, which are more resistant to rapid digestion than the alpha-1,4 linkages found in traditional sweeteners. This results in a slower release of glucose into the bloodstream and a significantly lower postprandial insulin response. Research conducted at the University of Toronto has evaluated its metabolic effects, particularly in individuals with abdominal obesity, demonstrating its potential to improve glucose tolerance and lipid profiles when used as a replacement for high-fructose corn syrup (HFCS).
