Overview

Sucrose octaacetate is an acetylated derivative of sucrose in which all eight hydroxyl groups are replaced by acetate groups. It is a natural product found in some plant species and can also be synthesized. Sucrose octaacetate is intensely bitter and has been widely used as a bitterant to deter ingestion (e.g., to prevent nail-biting or thumb-sucking), as well as a denaturant for alcohol. In the food industry it serves as a flavoring agent and stabilizer; in pharmaceuticals it acts as an excipient to enhance solubility and bioavailability of drugs. It is also used in cosmetics (as an emulsifier/thickener), pesticides (as an inert ingredient or deterrent), adhesives, plasticizers, and research applications including drug delivery systems and carbohydrate chemistry[2][3][5][6][8]. Sucrose octaacetate has low toxicity with no major health hazards identified from acute or subchronic exposure; it is likely metabolized into sucrose and acetic acid[1]. Its mechanism of action when used pharmaceutically relates primarily to its physicochemical properties rather than direct pharmacological activity.
