Overview

Tannase-treated green tea is **green tea extract bio-transformed with the enzyme tannase**, resulting in the hydrolysis of gallated catechins such as (–)-epigallocatechin gallate (EGCG) and (–)-epicatechin gallate (ECG) into their de-gallated forms (–)-epicatechin (EC), (–)-epigallocatechin (EGC), and gallic acid (GA)[1][4][8]. This process **increases antioxidant activity** and is reported to enhance health benefits such as anti-oxidant, anti-inflammatory, anti-tumor, anti-obesity, and anti-sarcopenia effects compared to standard green tea. Mechanistically, tannase-treated green tea modulates signaling pathways involved in muscle growth and atrophy (including AMPK and mTOR/S6K), increases expression of myogenic differentiation factors (myogenin, Myf5, MyoD), and may reduce muscle wasting. It is being studied for its potential in **functional foods, nutraceuticals, and as a therapeutic supplement** for conditions like sarcopenia, oxidative stress, and metabolic disorders[1][3][5][6][7][8].
