Tart cherry extract is a botanical extract derived from the fruit of *Prunus cerasus*, most commonly the Montmorency variety. It is a complex mixture of polyphenols, including anthocyanins (such as cyanidin 3-rutinoside), flavonoids (quercetin, kaempferol), and chlorogenic acid, along with naturally occurring melatonin. The extract functions as a multi-target anti-inflammatory and antioxidant agent. Biologically, it inhibits the cyclooxygenase enzymes COX-1 and COX-2, similar to the mechanism of non-steroidal anti-inflammatory drugs (NSAIDs), and reduces uric acid production by inhibiting xanthine oxidase. Additionally, it scavenges reactive oxygen species (ROS) and modulates NF-κB-mediated apoptotic signaling pathways. While not an FDA-approved pharmaceutical, it is widely utilized as a dietary supplement for managing gout, enhancing muscle recovery after strenuous exercise, improving sleep quality, and supporting cardiovascular health.
