Overview

Walnut protein is a naturally derived protein extracted from walnuts, recognized for its nutritional value and diverse functional properties. It is being investigated for its potential in oral immunotherapy (OIT) to induce desensitization and tolerance in individuals with tree nut allergies by modulating immune responses. Beyond its therapeutic potential, walnut protein is extensively studied as a functional food ingredient due to its emulsifying, foaming, and gelling capabilities, which can be enhanced through various physical and chemical modifications. It is also a source of bioactive peptides with potential health benefits, including antihypertensive effects through angiotensin-converting enzyme (ACE) inhibition, and antidiabetic properties via dipeptidyl peptidase-IV (DPP-IV) inhibition. Furthermore, modified walnut protein hydrolysates can form complexes that enhance the bioavailability of essential minerals like iron, positioning it as a promising component for nutritional supplements and functional foods.
